1 package (16 ounces) frozen mixed vegetables
1-1/2 cups frozen corn kernels
1 can (14 to 15 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
2 cups beef broth (I use jarred Better than Bouillon mixed with water)

How To
In a large nonstick skillet over medium heat, place the ground beef and onions. Add in some salt, pepper and any other seasoning you like. Cook and break up the beef into small crumbles. This will take about 5 to 7 minutes to cook, the beef should not stay pink.
Drain of fat if there’s any.
In the crock pot, place the ground beef, potatoes, mixed vegetables, corn, diced tomatoes, tomato sauce, beef broth and water.
Cook covered for 6 to 8 hours hover low heat.
Taste and add additional salt and pepper, if desired.
