Spinach are very good for the health, we are always looking for new ways to cook them. Well today’s recipe is not from this world. This skinny ham spinach amp cheese pasta casserole is ridiculously delicious. The combination of pasta, spinach and cheese is just incredible. Check it out, and I’m sure you will definitely give it a try.

Spinach and Pasta Casserole.

You’ll Need

1⅓ cup dried whole grain penne pasta
1 (6 ounce) package fresh spinach
1 teaspoon olive oil
1 cup onions, chopped
2 tablespoons all purpose flour
1 teaspoon dry mustard
½ teaspoon ground black pepper
1 cup evaporated fat-free milk
1 cup fat-free cottage cheese or fat-free ricotta cheese
3 tablespoons Parmesan cheese, grated
1 cup (4 ounces) ham, diced (you could use turkey ham)
2 tablespoons Parmesan cheese, grated

How To

First, heat the oven to 400°F and prepare a 9-inch-9-inch baking dish with cooking spray.
Cook the pasta according to package directions in a medium saucepan.
In a large colander, place the spinach and put it in the sink then pour the cooked pasta over it and drain well.
Microwave the onions for about 2 minutes until soft and cooked.
In a nonstick pan, heat 1 teaspoon of oil, add in the onions and cook for a few minutes. Add in the flour, dry mustard and peper. Stir for 1 minutes then add in the evaported milk gradually. Cook for an additional minute antil slightly thickened.
Add in the cottage cheese and 3 tablespoons of the parmesan. Mix until cheese is melted then add the pasta and spinach and ham.
Once the pasta and spinach are well combined with the mixture, place it in the baking pan. Add 2 tablespoons of parmesan cheese to the top then bake for 10 minutes.
Let it cool for 10 minutes before cutting into 4 squares.
You can use a spatula to remove from the pan and serve.
