It’s so delicious, you have to try it!
½ cup of chopped onion.
½ tsp of dried thyme.
¾ pound of skinless, boneless chicken breast cut into bite sized pieces.
½ tsp of salt.
1 cup of uncooked instant rice.
½ cup of grated fresh parmesan cheese.
1 tbsp of olive oil.
1 tsp of bottled minced garlic.
1 package of pre sliced mushrooms (8 ounces).
½ cup of dry white wine.
¼ tsp of freshly ground black pepper.
1 cup of fat free less sodium chicken broth.
¼ cup of chopped fresh parsley.
Over medium-high heat, heat the oil in a large nonstick skillet and sauté the onion, garlic, thyme, and mushrooms for 5 minutes.
Mix in the chicken and sauté for 4 more minutes then add the wine, salt and pepper and cook for 3 minutes.
Mix in the rice and broth and bring to a boil. Reduce the heat and simmer covered for 5 minutes then stir in the cheese and parsley.
Easy, peasy and yummy! Anyone who gets a taste of this won’t get enough, trust me! The rice and broth go perfectly with the sautéed chicken, onion garlic and mushrooms, and with that flavor of parmesan cheese, it’s irresistible!!
