Winter is around the corner, so I’m starting to take out my soup recipes. Last night I made this panera broccoli cheese soup, it’s was superbe!
You’ll Need:
1 tbsp of melted butter.
½ medium chopped onion.
¼ cup of melted butter.
¼ cup of flour.
2 cups of half & half cream.
2 cups of chicken stock.
½ lb of fresh broccoli.
1 cup of julienned carrot.
¼ tsp of nutmeg.
6 ounces of grated sharp cheddar cheese.
Salt and pepper.
How to:
In a saucepan, melt 1 tbsp of butter and sauté the onion and set aside.
In the same saucepan, mix together the ¼ cup of melted butter with the flour and cook while stirring for 3 to 5 minutes over medium heat. Pour in half & half and mix.
Fold in the broccoli, carrots and onions and cook for 20 to 25 minutes on low. Season with salt and pepper, add cheese and mix in the nutmeg.
Enjoy.
Simple, easy and yummy! I always purée this panera broccoli cheese soup in a blender so that my kids don’t know what they’re eating! Give it a shot and let me know what you think.
