Chicken is something we eat almost every week if not more. We are always looking for new ways to making taste even better. This easy chicken posole is something else, it’s very easy to make, simple and flavory! This chicken posole is a must-try!
Chicken Posole
You’ll Need
1 tablespoon expeller-pressed canola oil
1 large onion, diced
5 poblano peppers, seeded and diced
5 garlic cloves, finely chopped
5 1/2 cup low-sodium chicken broth
1 1/2 pound boneless, skinless chicken breasts
1/2 teaspoon fine sea salt
5 cups thinly sliced chard leaves and stems (about 1/2 bunch)
1 (28-ounce) can hominy, drained and rinsed or 2 1/2 cups frozen corn kernels
3 tablespoons chopped fresh oregano leaves
1/8 teaspoon ancho chile powder or cayenne pepper
2 limes, cut into wedges
How To
Over medium-high heat, heat the oil in a soup pot. Put onion, poblanos and garlic into the soup pot and cook while strring for about 7 to 8 minutes.
Add in the broth, chicken and salt, cook for about 20 minutes until the chicken is tender. Let the chicken cool for at least 5 minutes on a cutting board. Shred chicken with 2 forks and return it to the pot.
Into the pot, add the chard, hominy and oregano and let all cook for an additional 5 minutes.
Onced cooked, taste it and add ancho chile powder or cayenne pepper.
This meal is best served with lime wedges and garnishes of choice.
