We all love chicken! There are many recipes out there showing us how to be creative with making chicken. Today, I’m presenting you this beautiful chicken piccata. With a little touch of wine this dish becomes irresitble. See how it’s made and give it a try.
Chicken Piccata
You’ll Need
1 pound chicken breasts, boneless skinless (you can use 2 large chicken breasts, butterflied, then cut in half to make 4 breasts)
1 tablespoon lemon juice
Salt and freshly ground black pepper, to taste
¼ teaspoon garlic powder
1 slice whole wheat or multigrain bread, (see instructions below to make bread crumbs)
1 large egg, beaten
Olive oil spray
2 teaspoons olive oil
1 tablespoon reduced-fat butter
½ cup reduced-sodium chicken broth
¼ cup white wine
1 lemon, juiced
1 tablespoon capers
2 tablespoons scallions or chives, chopped (for garnish)
How To
First prepare the chicken. Cut it into 4 pieces, place each piece between 2 sheets of parchment paper and pout out to 1/4-inch thick. Place the chicken in a plate and pour 1 tablespoon of lemon juice over it. Add some salt, pepper and garlic powder to both sides of the chicken.
Next, toast the bread and break it into pieces then grind it into crumbs in a blender. Remove the bread crumbs to a plate.
Beat the egg in a shallow bowl and dip the chicken in the egg then the bread crumbs. Continue with the rest of the chicken.
Spray a large nonstick pan with olive oil spray. Add in the olive oil and heat. Add in the chicken, cover the pan and cook for 3 minutes.
Turn over the chicken carefully, cover and let the other side cook for an additionnal 2 minutes. Once cooked, set aside.
Melt the butter in a small saucepan, add in the chicken broth, wine, lemon juice and some salt and pepper. Let it boil over medium-high until it’s reduced in half. It will take about 2 minutes to prepare. Add in capers.
Place each chicken breast in a plate, and spoon over the sauce evenly. Add some scallions or chives over the top and serve!
